Gut healing chia and cinnamon oats

I know a lot of you struggle with time in the morning, so this brekkie is perfect for the busy bees. It’s a really simple breakfast packed with flavour that will keep you feeling full and satisfied throughout the morning.

Serves: 1

Ingredients:

  • ⅓ cup oats

  • 1 tbsp chia seeds

  • 2 cups milk, juice or water

  • 1 tsp cinnamon

  • ½ sliced banana

  • 2 tbsp peanut butter

  • 1 tbsp crushed peanuts

  • a drizzle of maple syrup

Method:

  1. Combine oats and chia seeds

  2. Pour over liquid (milk, juice or water) and leave to soak overnight

  3. Place in a pot on the stovetop over medium heat and bring to the boil

  4. Reduce heat and simmer until fully cooked (10 to 12 minutes)

  5. Once cooked, stir in cinnamon

  6. Pour oats into a bowl

  7. Top with sliced banana, peanut butter, crushed peanuts and a drizzle of maple syrup
